Our extra virgin olive oil is produced from the grounds of Chianti Classico DOP. It is first pressed in a continual cycle at low temperatures at a trustworthy Frantoio. The olives are harvested in November and they are taken to be washed and pressed within 48 hours after picking. Resulting in a production of 18 quintals per year. This method attains an opaque light green colour with a genuine spicy taste.
