Vin santo is born from the ancient methods used by the “contadini” farmers. The grapes Malvasia and Trebbiano are left to breath in airy lofts for at least 3 months. The grapes are then taken of the stalks, squeezed and the pulp and juice is transferred to cartelli, small wooden barrels, for another 3 years. After this long procedure the wine is transferred to glass demijons. It has a dry taste and 16° alcohol. It has a vivacious clear amber colour with the aromas of dried fruits, almonds and dried figs with hints of honey. On the palette it has an very intense velvet effect. To be taken with the traditional Cantucci biscuits but also with very mature cheeses.
